The subtleties of preparing a drink

Although all varieties of cherry plum are suitable for preparing the drink, it is best to give preference to hybrids with a high sugar content in the fruits.

During the process of preparing an alcoholic beverage, it is necessary to eliminate the pectin contained in the fruit. It also promotes active juice secretion. For this, pectinase is added to the wort. If you cannot get this substance, you will have to ferment the puree yourself.

Depending on the temperature and activity of the yeast, fermentation lasts for 20-50 days. If the fermentation process has not ended after 50 days, then the drink will need to be drained so as not to mix it with the sediment. Usually a tube is used for this.

How to make cherry plum wine at home

Making cherry plum wine at home is not as difficult as it might seem at first glance. The main thing is to find a good recipe.

What is required from the products:

  • cherry plum;
  • 3 liters of boiled cooled water;
  • raisins;
  • sugar (300 g per 1 liter of the resulting juice).

How to do:

  1. Sort out the fruits. You do not need to wash them; natural yeast, which is contained in all fruits, should remain on the peel.
  2. Mash the fruit with your hands or a crush. The main thing is not to crush the bones, otherwise the drink will taste bitter.
  3. Mix the mass with raisins. Pour in water, stir.
  4. Wrap the neck of the bottle with gauze.
  5. Place in a room with a temperature of +18 to +27 degrees. It is advisable to mix the mass up to 3 times a day.

After about 3 days, active fermentation will begin. After this has happened, drain the fermented juice from the sediment, squeeze the remaining peel and pulp. Pour the juice into a prepared container, add sugar. You need to fill the cans by ¾ of the volume.

Put on a needle-pierced glove on the jar. Move the jar to a warm place. When another 3 days have passed, add the remaining sugar (100 g). Drain 300-400 ml of wort, mix with sugar and drain again. After a week, repeat again.

Then carefully drain the wine so that it does not mix with the sediment. Add more sugar and some vodka if desired. Transfer to jars and put the glove back on for 10 days if re-added sweetener. Remove containers with a drink for 45 days.

What you need from the products:

  • cherry plum;
  • currant;
  • water;
  • fermented berry sourdough;
  • 1.4 kg of sugar.

How to cook:

  1. Remove the seeds from the cherry plum, put the pulp in a saucepan, add water (for 1 kg of fruit, 200 ml of water).
  2. Simmer for 20 minutes without bringing the liquid to a boil.
  3. Then separate the pulp, mix 1/3 of the sugar with a small amount of the resulting liquid.
  4. Pour it into the total mass.
  5. Pour ¾ of the wort into bottles, then add the leaven.
  6. Cork the bottle with a cotton stopper and put it in a room with a temperature of +20 to +23 degrees.
  7. Pour sugar in equal amounts every three days.
  8. When the wine stops fermenting, the bottles are placed under a water seal for 25 days.

  • 6 g citric acid;
  • 3 kg of granulated sugar;
  • 5 liters of water;
  • 3 g yeast feed.

How to cook:

  1. Do not wash the cherry plum, remove the seeds and grind in mashed potatoes with a blender.
  2. Cover the container with the berry mass with gauze, put in a warm place for 2-3 days.
  3. When foam begins to appear, the juice is drained, and the berry mass is squeezed out.
  4. Add water, half sugar, citric acid and make-up to the juice.
  5. After that, put on a glove with a hole in your finger on a container with a drink.
  6. After 2 weeks, drain the liquid from the remainder, add sugar and the second part of the make-up.
  7. Put on the glove again for 2-3 weeks. Then repeat these steps.

What do you need:

  • 3.5 kg of ripe cherry plum;
  • 1.5 kg of sugar;
  • 4.5 liters of water;
  • wine yeast;
  • pectinase.

How to cook:

  1. Crush cherry plum in mashed potatoes with a rolling pin. Pour 1 liter of water.
  2. After 3 hours add the second part of water and pectinase.
  3. Cover the container with gauze, leave for 2-3 days in a cool place.
  4. Then the liquid must be brought to a boil and immediately removed from the heat.
  5. Dissolve the sugar and wait for the drink to cool.

Introduce yeast and feed. Close the container with a water seal. Leave the wine for 1-1.5 months. During this time, the fermentation process should take place. Then the drink is poured into another container without stirring the sediment. When fermentation is over, pour the wine, separating it from the sediment layer. Add vodka and sugar to the drink to taste. Send the wine for 1-3 months so that it “ripens”.

The container should be tightly closed so that no air gets inside.

  2. Place the puree in a large glass bottle, add the raisins and water. Stir the liquid with a wooden stick.
  3. The container is wrapped tightly with gauze and placed in a dark room with a temperature of +22 - +24 degrees.
  4. The fermentation process starts after about 3 days. After 2 days, drain the juice, squeeze the pulp.
  5. Then pour sugar into the juice. Close the bottle with a water seal. Leave for 15-45 days.
  6. When a precipitate appears, the drink must be carefully drained. Leave the wine to infuse for 40-90 days.

The term and rules of storage of the drink

Homemade wine can be stored in plastic bottles for no more than 3 months. It can be stored in glass jars or bottles for up to 1 year. If the cans are rolled up, the wine can be stored for up to 5 years. It is recommended to keep the drink in a cool place away from sunlight.
